Russian blini (Bliny) are traditional thin pancakes beloved on Russian tables.🥞
Made with wheat or buckwheat flour, they have a soft, slightly chewy texture and a subtle nutty aroma.
They’re most commonly served with salmon roe—often called “red caviar” in Russia—and sour cream, a pairing that perfectly balances salty and creamy flavors.
While blini are typically enjoyed as a savory appetizer, they also pair beautifully with honey or chocolate for a simple dessert.

This recipe was originally shared with me by a Russian friend, whose grandmother used to make it at home.
I’ve slightly adjusted the proportions and steps to create my own family-style version.😊
Soft, airy, and lightly tangy, these blini are not only perfect as a starter for dinner but also make a cozy weekend brunch.🍽️
