Mücver is a zucchini fritter from Turkey that reminded me of Japanese oyaki or okonomiyaki when I first tried it. It has a soft, savory flavor that feels familiar and comforting. In Berlin, you can often find Mücver sold as a quick and tasty snack at market stalls. When served with a yogurt sauce, it takes on a refreshing, tangy twist—perfect for any time of year.✨

Ingredients

For 4 people

600g of Zucchini (3–4 pieces)
1 teaspoon of Salt
30g of Spring Onion (about 2 stalks)
Frühlingszwiebel in German. You can also use green onions or scallions.
3 tablespoons of Parsley (appropriate amount)
2 Eggs
3 tablespoons of Flour
1 teaspoon of Paprika Powder
An appropriate amount of Pepper
An appropriate amount of Oil

Yogurt Sauce 1

150g of Yogurt
20–30g of Cucumber (about 1/3 piece)
2 teaspoons of Lemon Juice
A little SaltA little Pepper

Yogurt Sauce 2

150g of Yogurt
1 teaspoon of Paprika Powder
2 teaspoons of Lemon Juice
1/2 teaspoon of Garlic
A little Salt

How to make it

1/Prepare the Zucchini: Wash the zucchini and cut off the stems. Slice them finely using a slicer (or chop finely with a knife). Add salt, mix well, and let sit for about 10 minutes. Then squeeze out as much moisture as possible.

2/ Chop the Herbs: Finely chop the green onion and parsley. 3/

Mix the Vegetables and Spices: Add the chopped green onion and parsley to the zucchini. Then add pepper, paprika powder, and the egg. Mix everything thoroughly.

Add the Flour: Sprinkle in the flour and stir well until evenly combined.

Fry the Fritters: Heat a generous amount of oil in a frying pan. Scoop spoonfuls of the mixture (about the size of a small pancake) and drop them into the pan. Fry until golden brown on both sides.

Drain the Oil: Remove the fritters from the pan and place them on kitchen paper to drain any excess oil. 7/

Make the Yogurt Sauce: For Sauce 1, finely slice or chop the cucumber and mix it with the remaining ingredients.
For Sauce 2, simply place all ingredients in a separate bowl and stir to combine.
