Ingredients

For 4 people:

280 g puff pastry sheet (about 32 cm diameter)
450 g frozen spinach
4 eggs
200 g crème fraîche (or fresh cream, sour cream, ricotta, etc.)

How to make it

1/ Prepare the Pie Plate: Grease a 26 cm pie plate with butter.

Place the Pie Dough: Place the puff pastry sheet on the pie plate and gently press it into place. Poke holes in several spots with a fork to prevent bubbling.

Cook the Bacon: Place the bacon (lardon) in a frying pan and cook over medium heat until slightly crispy. No additional oil is needed. Once cooked, transfer the bacon to a plate.

Sauté the Spinach: In the same pan, add a little olive oil and sauté the spinach until wilted.

Prepare the Egg Mixture: In a large bowl, beat the eggs. Add the crème fraîche and mix well until smooth.

6/ Combine the Fillings: Add the cooked bacon, spinach, shredded cheese, and pepper to the egg mixture. Mix gently to combine. (Since bacon is salty, there’s usually no need to add salt, but you can adjust the seasoning to your taste.)

7/ Bake the Quiche: Pour the mixture into the prepared pie crust. Bake in a preheated oven at 180°C (350°F) for 30 to 40 minutes, or until the quiche is set and lightly golden.
