1/ Prepare the Parmesan Cheese: Grate the Parmesan cheese. (Use 80g for the risotto and reserve 20g for serving.)

2/ Make the Stock: In a pot, bring 1 liter of water to a boil, then add the bouillon to make the stock.

3/ Chop the Onion: Finely chop the onion.
4/ Sauté the Onion: In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until soft.

Toast the Rice and Add White Wine: Once the onion is soft, add the rice and sauté over high heat for 2 to 3 minutes. Pour in the white wine and let it evaporate.

Gradually Add the Stock: Reduce the heat to medium-low. Add two ladlefuls of stock from Step 2 to the pot with the rice.

Continue Cooking and Adjust the Seasoning: Once the rice has absorbed the stock, add another two ladlefuls and repeat until the rice is moist and creamy. Season with salt halfway through to adjust the taste.

Finish with Butter and Parmesan: When the rice is cooked, remove the pot from the heat. Stir in the remaining 2 tablespoons of butter and 80g of grated Parmesan cheese until well combined.

Serve and Enjoy: Serve the risotto on a plate, sprinkle with the reserved 20g of grated Parmesan cheese and pepper to taste, then enjoy!
